Hello Sunshine! I don’t know about you, but our weekends are filled with rest, relaxation, hanging out with our friends and family. Then we get to do the weekly shopping. We are so blessed to have great Farmers Markets here in Austin, TX and being a vegetarian, I am just loving it! My husband is a meat eater, but he is a locavore, so having lots of local farm raised meats available is fantastic.

So, I want to share with you these easy peasy popsicles we adults enjoy at our gatherings after a long week in the warmer days. Please enjoy responsibly, keep out of reach of children & even try them without the alcohol if you like. Simply substitute with sparkling soda or ginger ale.

Tequila Time Fruit Popsicles

  • 2 Cups Pineapple Juice (fresh is best)
  • 1 lb. Fresh Pineapple, Peeled & Pureed
  • 3/4 C. Tequila
  • 1/4 C. Grenadine

Instructions

  1. Combine & stir pineapple juice, pureed pineapple & tequila. Fill popsicle wells 3/4 way up with pineapple mixture. Pour 1 teaspoon of grenadine into each well.
  2. This is where I insert sliced strawberries, blueberries, raspberries, or Luxardo Maraschino Cherries into each popsicles. Insert the popsicle sticks & cover the popsicles. If your popsicle molds don’t have covers, just cover with foil and cut a slit for the stick. Keep in the freezer & enjoy when frozen!

*This recipe makes 32 ounces of goodness plus the fruit you add. Depending on the size of your popsicle molds, is how many popsicles you will have.

These are so perfect on the deck for the neighborhood Happy Hour. Always remember to have plenty of water for your guests when serving alcohol. You never want anyone to get dehydrated and hungover at your gathering.

Hello Sunshine! I hope you are well. I am ready for Spring here in Austin, TX. I love that we get a mixture of days though. One day it’s cold, the next it can be 70 degrees, sunny and beautiful.

Well, I have been a Vegan for Lent before, but I really want to start adding a few more to my menu so I have been trying to make new recipes. Last week I made this Mouth Watering Ratatouille! I have never made Ratatouille before, but I have made Pisto. I wanted to make this Ratatouille very pretty. I know, I was inspired by my favorite Disney movie! It is super easy to make and I want to share the recipe with you.

Ratatouille

  • 1 medium zucchini
  • 1 medium yellow summer squash
  • 1 pound eggplant. I used Japanese eggplant in order to keep the veggies the same size.
  • 1 pound ripe red tomatoes. I used Roma tomatoes
  • 1 tablespoon minced garlic (about 3-4 cloves)
  • 2 tablespoons fresh chopped basil leaves (about 2 full medium stems)
  • Olive Oil
  • cooking spray

1. Preheat oven to 250 degrees. I used our toaster oven

2. Slice vegetables in the same thickness.  I sliced the veggies 1/4 thin, thin slivers.

3. Lightly oil an oven safe casserole dish.

4. Place a flat a row of tomatoes and sprinkle with garlic and basil.

5. Gather equal amounts of vegetables to place on their side in the uniform rows until you get to the center of the dish.

6. Sprinkle more garlic and fresh basil on top of the rows of vegetables.

7. Drizzle olive oil on your completed dish.

8. Bake, covered, for 1 to 11/2 hours, until the vegetables are tender.

9. Serve hot over rice, couscous, noodles if you like, but I served mine without.

We have a very fancy and expensive Mandolin Slicer, but I used one that I got at a discount store. Sometimes getting the big Mandolin Slicer is too much trouble. In other words, you do not need a super fancy one, just look for one of those handheld models.

I really hope you make this recipe. It looks beautiful and tastes even better!

Hello Sunshine! I hope all is well with you. I have been a Busy Bee with normal around the house things, family holidays and getting my pantry ready for Lent. Although I am a vegetarian, I am Vegan for Lent. Well, my son has been wanting chocolate chip cookies and of course, whatever he wants~ he gets! Maui Brand Sugars was kind enough to give me their Maui Whites and Maui Raws to try & I wanted to make the cookies using their sugars. Here is the recipe I used:

Chocolate Chip Cookies with Maui Raws

(Yield 2 dozen)

Ingredients:

  • 1 stick unsalted butter (softened)
  • 1/4 cup Maui Whites Natural Cane Sugar
  • 1/2 cup Maui Raws Turbinado Sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/4 c all purpose flour
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup chocolate chips

Instructions:

Preheat the oven to 375 degrees.

Cream the butter and the Maui Brand Sugars, then add the egg and vanilla. Sift flour, baking soda and salt in another bowl, then add to the wet mixture, mixing with a handheld mixer. Stir in chocolate chips, then scoop using rounded tablespoons onto an ungreased cookie sheet.

Bake for 10 minutes.

You can find Maui Brand Sugars in your neighborhood supermarket in the sugar aisle. Maui Brand Sugar is Naturally Gluten Free, Non-GMO, Vegan Friendly & Made in the USA. I love the Maui Brand Individual Sticks for guests in our home! I always have my girlfriends over for coffee or tea and the sticks are so convenient!

I hope you try Maui Brand Sugar next time you reach for sugar at your market. I think you will like it & make the chocolate chip cookie recipe with the sugar too!

Hello Sunshine! Are you keeping up with all the media surrounding the deflated balls? Yikes! I stopped watching The Real Housewives shows a few years ago because I couldn’t take the drama anymore, but now I have football drama! I am always looking at the good in people, so I don’t know what to think. I know, get angry with me.

So, I am on the ‘Low-Carb’ diet for my epilepsy. However, I am 42 years old and I really do care about what I eat in order to maintain a healthy output in my day. I follow the low carb diet ‘lightly’ but not so much as I do not let myself rarely enjoy a carb. After all, I work out daily and I am a vegetarian, so I feel that as long as I don’t indulge in carbs constantly, I am ok. My husband on the other hand has been ‘following’ the Paleo diet for weight loss for about 3 years, but has not had any results. He knows that the diet does not work for everyone, but I notice that he does not follow some of the guidelines. I want to help him & I thought I would kick start it with Super Bowl. He will be so into the game that he won’t even realize the food & snacks that I made for him. He really needs to add more veggies to the diet, so I will be adding veggies to the Super Bowl Spread! I found lots of recipes and Pinned them on my Pinterest Board here labeled: ‘Paleo / Low Carb’ if you would like to take a peek. I’ll let you know what I chose to make & how it went over with him.

Hello Sunshine! I hope all is well with you. Did you see all the Oscar nominee’s? Well, I have seen all the Best Movie nominations but not the actor or actresses. We really do enjoy going to the movies, but I wonder what most couples do for entertainment? We live in a beautiful city & I enjoy the hike & bike trail, but I go alone. He likes other trails in Austin, best we exercise separately.

Well, since I have epilepsy I have mentioned before that it has been said that following a low-carb/paleo diet can decrease seizures. It has not been proven medically, but I do it because, why not? I started following a website called PaleoCupboard.com & this website has so many recipes if this is a diet for you. Of course, always check with your physician before starting any diet.

Anyway, I made the Paleo tortilla’s from the website and they were easy to make! I am a Latina, but I have never made tortillas before. I did buy a tortilla press at a Fiesta grocery store, but you may find them at your local Mexican Market. I guess I am trying to say, don’t be discouraged. If I can do it, it is possible!

The website is packed with recipes by categories of beef, chicken, seafood, side dishes, desserts, etc. I am a vegetarian and it is a diet that can be hard for me to follow, so I really do Low-Carb mainly & I find a way. I filled my Paleo tortillas with sautéed mushrooms and green onions with salt & pepper in olive oil. I topped them with fresh avocado slices, the perfect meal for a vegetarian. Next time I will sauté peppers, but I only had mushrooms in my kitchen. As a vegetarian, I know to use what is in season, but also what we have in the fridge.

So, have you signed up for Thundercloud Subs Turkey Trot? With all of the calories about to be consumed it may be a good idea to start the day with a nice 5 mile or 1 mile walk / run. I know when I was growing up here in Austin, I always signed up. I wonder why I stopped? I need to look into that tradition & get back into it.

Well, I wanted to let you in on the menu. If you follow my little posts, you may know that I suffered a concussion a while back and I now have daily migraines and epilepsy. It can be challenging most days and yes, it has been a ‘New Life’ to learn as my doctors and almost everyone has told me~ to live. Anyway, I don’t want to go there, just want to let you know that I myself can’t do it all and you may not want to do it all, but I do want to do some, so I like the idea of having a ‘Modern Thanksgiving.’ I buy the Perfect Turkey & a few sides from Whole Foods and my Gourmet Pies from St. Philip. Also, I am a vegetarian & I eat low carb diet and I like to introduce my guests to a little of the diet. Not because I want them to convert, but because I just don’t want my guests to overload on the carbs.

If you have not had Cauliflower ‘Mashed Potatoes’ yet, well you are just missing out! I absolutely love them. Talk about a fooling and when you doll them up with some garlic and thyme, you will not realize they are not potatoes. It’s all about the flavor that you don’t miss the broth or the starch stuff. I also like a little stuffing with quinoa. I just love anything made with quinoa! Since I am a vegetarian, I look for anyway to get protein and quinoa is a great way to get me some! Some say quinoa is a Super food. So, you can try a bit of this in your Thanksgiving menu, here is the recipe I used from Self : Quinoa Stuffing

Ok, I am a Texan ~ Born & Raised. I love anything smoked. I would probably smoke my lipstick if my husband would think the kisses would be tasty. Ha Ha Ha! Another one of our favorite party starters is Smoked & Grilled Brie! We have this Camerons Stovetop Smoker and I use it for almost everything. So, I buy just any simple brie because I am going to flavor it myself. I smoke it in the smoker for about 30 minutes in the Camerons Smoker. Then I grill it on a Stovetop Grill Pan only for about 2 minutes, each side, just to get grill marks and melt the cheese inside the rind. Serve this with crackers and yum! I found these Fig and Olive Crisps from Trader Joe’s & they are fantastic with the Brie.

Ok, so if you are having dinner at home or if everyone is coming to a hosts home after a restaurant dinner, you may want to reserve a spot for adult beverages. Just a little sitting area if there is not anyone going to the reserved spot you made outside. Just with after dinner Brandy, Port, Scotch a few beers or even an assortment of wine & non-alcoholic beer & non alcoholic sparklers, as well. Oh, I love a Signature Drink! Something named after the hosts or The Holiday. We always have A Diaz Spritzer, A Diaz Sangria ( like we had at our wedding) or A Diaz Something! One thing for sure, have a few bottles of bubbles! Have you ever noticed that someone may make a special announcement when the family is together? An engagement, someone is expecting, someone has purchased a home or a promotion. You may want to have some champagne to celebrate! Hey, if there are not any announcements, you have champagne to relax with after all the guests leave. Of course, Don’t forget the water! I like to put little nuts and banana chips with coconut chips as snacks. It seems like this is such an eating holiday, but little snacks are good to have just in case.

One of my family traditions growing up is to decorate the Christmas tree. It’s a perfect time because we are all together and we all do it together, especially if you have family heirloom ornaments. Memories! I have beautiful memories of us decorating the tree with my grandparents! Prior to everyone coming I usually have the tree up, but we use an artificial. And the decorations are in a box ready for us to place on the tree. If you favor a natural tree, I think there are Christmas Tree Stands up at Thanksgiving time.

Another tradition, of course is watching football! What is not to love of cheering on your favorite team. Since my husband & I dated we would always favor opposing teams just to make things interesting. Of course, having a friendly wager is always nice!

If the kids need something to do, I have a little ‘Pin The Face On The Turkey’ In the Activity Book provided, so you may want to have an eye mask or something to cover the little ones eyes. Also, have little scissors and crayons or colored pencils. I made these little activity books for you to print up: We Give Thanks Activity Book

I also have a little banner that you can print up. This is your preference. If your kiddos are better with scissors, they can cut around the leaves, if not so much, just hang up the full pages. I prefer to use clothes pins to hang this banner because it makes it so easy to hang. Simply measure enough ribbon or string to cover the area you will place the banner. Tape the Clothespins onto the back of the cut out paper leaves or pages and then simply ‘clothespin’ where you will like each ‘letter.’ Here is the printable for that banner: Give Thanks Banner

So, the best tips I can gather up for you to host an event is:

  • Have some outdoor activities, if your weather permits with sunscreen, bug spray & seating
  • For your menu, make sure you ask your guests (if you are hosting) Vegans, Vegetarians, Gluten-Free, Diabetics, etc.
  • Ask if you are hosting children to have a kids menu, this is not the time to battle ‘picky kid eaters’ and have kid activities for them so they are not bored when the adults are having adult talk or adult fun.
  • Have Champagne on hand just in case anyone makes any special announcements. This is the time family is together and the perfect time to let others know of happy news!
  • Have Tide Sticks or your favorite stain removers because your guests may be wearing their very best and could have a food spill from all the ‘good eats’. You don’t want them to ruin any of their new or favorite wardrobe items at your event.
  • Have lots of water available in lots of places & make it inviting to those who may not even like water so that none of your guests get dehydrated. Especially with all the talking & alcohol that may be consumed. No hangovers from your event!
  • Keep to your regular fitness schedule prior to your event. Keep to your regular sleep schedule. Take care of your body & skin, so you do not look tired.

Oh, I am sure I can think of a million & one more things, but this is good for now & you can always look back at the previous posts. The most important thing to remember~ this is the time for family & friends to be together & Give Thanks. Thanks for all we have been given. Thanks for being there for each other. Thanks for every gift we have received. The message I most believe is, Love Is Why We Are Here. We give that love to our family, our friends & we share that love with new friends also.

Hello Sunshine! I’m so excited for Halloween, how about you? We don’t have any little ones, but I have nephews & they always come up with unique and cool costumes. We don’t have any nieces, but I wish we had a little Princess dressing up. I have not seen the movie Frozen, but I hear that costume is popular. Well, all the best getting your costumes ready!

So, I am a bit of a ‘Foodie’ if you like that term. If you look at my Instagram, I do post quite a bit of my food pics and I even have the hashtag, ‘78737foodie‘ for the food we eat at home. Not all of it is considered ‘foodie,’ but it is what we eat that may be out of the norm. I was extremely excited when La Lechera asked if I would like to post a recipe on my blog using their sweetened condensed milk. Yes, this is a sponsored post, but it is something that I did not mind using and I did request the Fat Free version.

I have a weakness for ice cream! I do not need a gallon serving, just a little at a time, but I remember years ago having a goat cheese ice cream & it was so delicious! I wanted to try making my own without whole milk and without an ice cream maker. I am cooking the mixture, but it is not too difficult so do not get discouraged. The cherries really add the perfect amount of fruitiness, like enjoying a cheese plate in an ice cream. It’s the perfect blend! Give it a try.

Ingredients

  • 2 Cups La Lechera Fat Free Sweetened Condensed Milk
  • 1 T & 1 teaspoon Cornstarch
  • 1/2 Fresh Goat Cheese, If you can get this from your Local Farmers Market, the better!
  • 2 oz. Cream Cheese, softened
  • 1/4 teaspoon finely crushed sea salt
  • 1 1/4 C. Heavy Cream
  • 2/3 C Sugar
  • 1/4 C Light Corn Syrup
  • Seal Tight Freezer Container
  • Roasted Cherries Recipe Below make ahead of the ice cream

1st Directions:

In a small bowl, mix the 2 Tablespoons of La Lechera Fat Free Condensed Milk & the cornstarch until smooth. Once the mixture is smooth, add in the goat cheese slowly, cream cheese & salt. Make sure it is all mixed and should be thick. After you have mixed this, fill a bowl with lots of ice & water. Make sure the bowl is larger than the container you are placing your ice cream in to freeze after it is cooked.

2nd Directions:

Mix the remainder of La Lechera Fat Free Condensed Milk, heavy cream, corn syrup and sugar in a 4 qt. saucepan and bring to a roaring boil over medium to high heat. Only boil for 4 minutes, no longer and stir constantly as to not burn. Remove from heat, and gradually start whisking in the thick cheese mixture by the spoonfuls. Once it is completely mixed in, place back onto heat and stir with a rubber spatula until thickened. This will be fast, about a minute!

3rd Direction:

Pour your cooked ice cream mixture into a freezer container & place the filled freezer container into the ice bath you prepared earlier. Make sure you add more ice as the ice melts from the heat of the cooked mixture. Keep the contained mixture in the ice bath for about 30 minutes & the container is cool to the touch.

4th Direction:

Once the mixture is cool and you start to feel it freeze up, you can begin layering it with the roasted cherries! I like to store my ice cream in any container with a seal tight lid. Begin with a layer of your thickened ice cream mixture, then a layer of the roasted cherries and keep alternating. Place the mixture in the coldest part of your freezer and let it freeze for at least 8 hours. I like to make this in the morning for after dinner dessert. The longer it stays, the longer it gets super creamy!

While I made it in the morning, I enjoyed my French press coffee with the La Lechera Dulce de Leche Coffee Creamer. It’s so delicious! I usually don’t use creamer because of the extra calories, but 1 Tablespoon is only 35 calories so I indulge now.

Roasted Cherries

16 oz (1 bag) Frozen Cherries

2/3 Cup Sugar

2 teaspoons Cornstarch

Pre-heat oven (I use toaster oven) to 400*

Combine the ingredients in a baking pan, toss the ingredients. Bake for 30-45 minutes or until you see the mixture bubble. Stir the mixture every 15 minutes to make sure the ingredients blend together. Let the mixture cool & place in the refrigerator until needed for the recipe.

I do hope you make this ice cream, I know you will enjoy it! If you like Goat Cheese, you will really love it, if you don’t know if you like goat cheese, give it a try, you may love it. Yes, there are lots of directions, but it doesn’t take long and it really is worth it. Ice Cream square
