Hello Sunshine! I am enjoying the sandal wearing days around here! I started the season with 3 new pairs of sandals because last year I missed sandals if you read my post about my broken ankle, So I Broke My Ankle, Big Deal!

Anyway, my son has a bit of a sweet tooth every now and then, but it’s a healthy one and he is extremely fit. He loves lemon desserts. This is my first attempt at filled cupcakes & it was pretty easy peasy!

You want to bake the cupcakes per box instructions and use a fruit corer to make a well for the filling. Make a deep enough well so the filling goes for almost every bite of cupcake, but not too far to break through the bottom. I like the corer that I used in my post, When Can You Enjoy That Fresh Pineapple?

I use Lemon Pudding mix, but I use Whipping Cream instead of milk for a very rich and thick filling. It’s exactly what my son likes! No need for a pastry bag to fill the cupcakes, just put the cream in a re-usable plastic bag & snip cut the corner of the bag. Fill up the wells evenly & done!

Decorating is easy, so don’t be intimidated. You can even purchase a starter decorating kit at your neighborhood H-E-B Grocery Store. Wilton Brand has a package containing decorating bags & decorating tips. Wilton Brand also has cake frosting containers available in store that holds decorations. I was able to blend the Wilton Brand Icing with Cream Cheese and it still held its shape & flavor! Just continually apply pressure to the bag as you form your decoration. It’s that easy!

My son really enjoyed his early birthday cupcakes. We ended up having friends over that evening for the boxing match so luckily the cupcakes did not last in the house long! They were all gone and a hit! I hope you make filled cupcakes for your next event. I can imagine chocolate cream filled would be amazing! Just substitute the milk for whipping cream. We compromised,one day at the Bob Bullock Texas History Museum & a Pinball arcade then Zilker Park & Barton Springs to exercise both. I am a Native Austinite & I have a son that I have taken to both Texas landmarks frequently when he was younger, also I attend mass weekly at a Cathedral about 2 blocks away from the State Capitol that I see it so often, I kind of take it for granted. The original Goddess of Liberty that towers above the Capitol is in the Bob Bullock Texas History Museum.When she was replaced in 1985 my dad took us to the capitol to see it. I still have the memory. There was a crowd and my brother & I had hot cocoa, while my dad had coffee. I am sure my dad is the reason why I have Texas Pride today. When I was telling my son all of the places I took my nephews to, Barton Springs, Zilker Park, The museum, The Capitol; he said those are all the places I took him to. We were frequent visitors of the museum because we always saw the new exhibits.

The Rotunda ceiling is grand and has a star with the letters TEXAS around it. It is a must to get in the center of the floor look up and take a photo. Just as much as when you get to the top floor, it is a must to look down and take a photo of the floor.

On the walls of the rotunda are painted portraits of the past Governors of Texas. I took a photo of Ann Richards because, I took my son to her Texas Flag-draped casket in The Texas Capitol when she died. Something I will always remember because there where so many waiting to see her.

I often use The Great Texas political & historian, Bob Bullocks quote of “God Bless Texas.” He has it on his headstone at the Texas State Cemetery. He had a love for Texas that that is more than any of us can claim, but I will always aspire to.

The State of Texas Capitol was Completed in 1888. An extraordinary edifice by any measure, the 1888 Texas Capitol is the largest in gross square footage of all state capitols and is second in total size only to the National Capitol in Washington, D.C. Like several other state capitols, the 1888 Texas Capitol surpasses the National Capitol in height, rising almost 15 feet above its Washington counterpart.

In 1993, the $75 million underground Capitol Extension was completed in the North, doubling the square footage available to Capitol occupants and providing much improved functionality. In 1995, a comprehensive interior and exterior restoration of the original building was completed at a cost of approximately $98 million. Hello Sunshine! Well, I don’t mind telling you that I am the annoying baby sister! My brother and I are only a year and a 1/2 apart so we always played toys together as kids. The neighborhood kid and my brother always picked on us little kids because we were smaller. I always followed my brother along because I wanted to be ‘cool’ and he always let me because he wanted me to stay out of trouble.

When we visit my brother who is now a single father of my 2 nephews he was telling them the story of how I would always take his Star Wars play lands and play with my Barbies in them. I can remember playing in some Ice castle as if it was Barbies cool ‘All white modern’ home. Even then I was a bit trendy. When my nephews heard the story they were just laughing thinking how bad they felt for my brother! They are very polite though. They said, “Excuse me, but that sounds really bad.” At least he said excuse me? Well, We are going to make slime when they are here!

The classic is always slime. You have probably made it before, if not try it out. I always love to make the slime and say~ similar to family~ no matter how much you pull it apart, it gets back together, like when they fly back to Seattle, they are still family and we will always be together. I like that each of us can make our favorite color and of course, the boys would never make pink, they need me around for that!

You only need a few items to make the science slime:

  • 1 Cup Elmer’s School Glue
  • 1 teaspoon Boorax (in the laundry detergent department)
  • 3/4 Cup Cold Water
  • Assorted Food Color of Your Preference
  • 1/2 Cup Hot Water
  • Zipper Bags for Storage of Science Slime

Instructions:

  1. Mix together the cold water, glue, & your preferred food coloring. (I Chose Pink)
  2. In a Mixing Cup or Small Bowl, mix together the Hot water & Borax, until the borax is Completely dissolved.
  3. Slowly add Borax mixture to the Glue Mixture, mix well. Pour off excess water, if any. You will notice the slime begin to form. Perfect lesson for the kiddos!

Super easy peasy right? Well, it is! And it is fun to make with the kids. They love seeing how it forms to a solid ball of slime right before their eyes. I have made this with kids that we had over some of my sons friends and maybe now my nephews will make it with their friends.

One things for sure, Barbie and my toy Mini Coopers will be playing with pink slime with my nephews! I have to be their lovable Auntie that girls everything up! I hope you get to make slime soon.

Hello Sunshine! I don’t know about you, but our weekends are filled with rest, relaxation, hanging out with our friends and family. Then we get to do the weekly shopping. We are so blessed to have great Farmers Markets here in Austin, TX and being a vegetarian, I am just loving it! My husband is a meat eater, but he is a locavore, so having lots of local farm raised meats available is fantastic.

So, I want to share with you these easy peasy popsicles we adults enjoy at our gatherings after a long week in the warmer days. Please enjoy responsibly, keep out of reach of children & even try them without the alcohol if you like. Simply substitute with sparkling soda or ginger ale.

Tequila Time Fruit Popsicles

  • 2 Cups Pineapple Juice (fresh is best)
  • 1 lb. Fresh Pineapple, Peeled & Pureed
  • 3/4 C. Tequila
  • 1/4 C. Grenadine

Instructions

  1. Combine & stir pineapple juice, pureed pineapple & tequila. Fill popsicle wells 3/4 way up with pineapple mixture. Pour 1 teaspoon of grenadine into each well.
  2. This is where I insert sliced strawberries, blueberries, raspberries, or Luxardo Maraschino Cherries into each popsicles. Insert the popsicle sticks & cover the popsicles. If your popsicle molds don’t have covers, just cover with foil and cut a slit for the stick. Keep in the freezer & enjoy when frozen!

*This recipe makes 32 ounces of goodness plus the fruit you add. Depending on the size of your popsicle molds, is how many popsicles you will have.

These are so perfect on the deck for the neighborhood Happy Hour. Always remember to have plenty of water for your guests when serving alcohol. You never want anyone to get dehydrated and hungover at your gathering.

Hello Sunshine & Happy Friday! A beautiful weekend is ahead of us all. We have April showers for us in Austin, TX. I couldn’t be happier because as we all know, April showers bring May Flowers.

Did you know that today is National Sibling Day? I am so very happy to honor my Big Brother, Anthony. I have always looked up to my brother & not just because he is taller than me. He is such a great man. He has always been so patient and wise. He has always given me such great advice and maybe since he is a big brother, he has been the best protector. When I saw the movie, Boyhood I was just so taken by the story. How they fought in the backseat of the car when they were kids and teased each other, but no matter what, they were so close. That is us!

Of course, that movie spoke to me on other levels as a parent and a wife of divorce, but that’s a different story.

My brother is a wonderful single father and will be visiting us in a few weeks and I can’t wait! Now, my nephews are growing up to be the sweetest siblings that are very loving, kind, respectable & I know that they will be able to build relationships as adults that are loving to others. I know that Family is where it begins. Family is the foundation.

Celebrate National Sibling Day. Call your siblings & let them know how much they mean to you.

Ok, I have been away for so long! Unfortunately I have had a few ‘episodes’ with my brain injury and I have been unable to post. Just my usual migraines and seizures, but it does keep me from writing. I have also been getting our home ready for a guest, well, guests. We just had my friend Jessica here last week and Next month my brother and my nephews will be here. Jessica was here to speak at Austin’s World Famous SXSW. I felt bad, but I kept telling her it was a big deal that she was speaking at the event because I was making her nervous. I am born/raised Austin, so I know SXSW before it is today. When it was just music and no badges were needed. Oh those were the days. Anyway, she and our other friends did fantastic! They were speaking about ‘How Latina Moms Are Raising Next Gen Coders.’ Yes, SXSW has changed. There is so much going on around the actual Convention Center and so many booths advertising their products & giving their products free to do just that. There are even people walking around as advertising. I was the driver for my friend. She doesn’t live here & I wanted her to have a great time, so it was so fun to see how Austin is still very beautiful and the parks are full outside of SXSW! Of course, get inside the madness and it is full of cars and people.

Well, I have been a busy bee reading for my spring book list. One of my favorite Instagram, @princessmousey friends recommended a book, I Forgot To Remember. I was immediately attracted because it is about a young lady who has had a brain injury and struggled with amnesia. She overcomes amazingly. Reading this book was very good for me, because it helped me to understand that I am not the only one that goes through this.

I like reading Sophia Kinsella books. Sometimes I just need to read a good girl book and the Shopaholic series are my tried and true ‘go to’s’. Having said that, Shopaholic To The Stars is not my favorite of the series. The book took a very long time to get me into it. I can easily read a 400 page book in about 2 days, but this book took me about 2 weeks because I could not find myself getting into it. However, the ending has me wanting to read the next. Go figure!

WOW! The Girl On The Train was amazing. When I was young I loved watching Alfred Hitchcock movies. This book reminded me of watching his movies, like Rear Window. Needless to say, I could not put this book down! If you start this book, look for a thriller.

After reading The Girl On The Train, I asked my Instagram, @princessmousey followers for a recommendation and given The Nightingale. This is a beautiful story of 2 sisters separate lives in German occupied 1939 France. You read the book, you really see how the sisters are different, but as you keep reading are they really that different? It is really a beautifully written book.

I love reading novels to take me to another place & time. I just love to read! You can find me on Goodreads. I really recommend these books. I believe these books were all 300-400 pages, but they are all written so beautifully, the subject is wonderful to take on spring break & are all so exciting that you will be unable to put them down, but that’s just my 2 kisses. You will find every moment of silence or just a moment of alone time to read!

I also want to let you know about e-mails I started receiving from Book Bub. Everyday I get their email of about 1-3 books that are FREE, .99 or $1.99 per book! I have bought a Vegan Cookbook, a Paleo Cookbook and a few novels. Of course, I have just deleted the email most times, but it is good to get a bargain book to download to your tablet.

My favorite is checking the free books on my iTunes books. I always find books there! Always the classics, but they also put newer books. If you have an iPad, check on the very bottom of the iBooks page for Free Books Tab & Weekly Bestsellers Under $4. There are even kid books in there.
