Hello Sunshine! I am enjoying the sandal wearing days around here! I started the season with 3 new pairs of sandals because last year I missed sandals if you read my post about my broken ankle, So I Broke My Ankle, Big Deal!
Anyway, my son has a bit of a sweet tooth every now and then, but it’s a healthy one and he is extremely fit. He loves lemon desserts. This is my first attempt at filled cupcakes & it was pretty easy peasy!
You want to bake the cupcakes per box instructions and use a fruit corer to make a well for the filling. Make a deep enough well so the filling goes for almost every bite of cupcake, but not too far to break through the bottom. I use Lemon Pudding mix, but I use Whipping Cream instead of milk for a very rich and thick filling. It’s exactly what my son likes! No need for a pastry bag to fill the cupcakes, just put the cream in a re-usable plastic bag & snip cut the corner of the bag. Fill up the wells evenly & done!
Decorating is easy, so don’t be intimidated. You can even purchase a starter decorating kit at your neighborhood H-E-B Grocery Store. Wilton Brand has a package containing decorating bags & decorating tips. Wilton Brand also has cake frosting containers available in store that holds decorations. I was able to blend the Wilton Brand Icing with Cream Cheese and it still held its shape & flavor! Just continually apply pressure to the bag as you form your decoration. It’s that easy!
My son really enjoyed his early birthday cupcakes. We ended up having friends over that evening for the boxing match so luckily the cupcakes did not last in the house long! They were all gone and a hit! I hope you make filled cupcakes for your next event. I can imagine chocolate cream filled would be amazing! Just substitute the milk for whipping cream.
